CHEESY BROCCOLI SAUCE OVER ROASTED RED POTATOES
1 cup butternut squash puree
1/2 cup plant-based milk
1/2 cup soaked cashews
1/2 cup cooked white beans
1/4 cup nutritional yeast
1 Tbsp tamari
1 Tbsp lemon juice
1 Tbsp smoked paprika
1 tsp faux chicken bouillon powder
1 tsp garlic powder
1 tsp salt-free seasoning
1/2 tsp dry mustard
1/4 tsp ground white pepper
1-2 drops liquid smoke (optional)
Process all ingredients until smooth and creamy, adding more milk if needed. Adjust seasonings to taste. Toss with steamed broccoli florets and serve over roasted potatoes.
